Texas Harvest is the fruit of our collaboration with good friends at a picturesque Hill Country winery. We chose one of their signature grape varietals, a 2016 harvest Tannat from Reddy Vineyards in Brownfield, TX and blended the must with 18-month-old-Ananke then re-fermented the blend for 4 months in Charbono barrels. Inoculated with the oenologist’s worst nightmare–Brettanomyces bruxellensis and Pediococcus damnoisis–the resultant soft acides blend effortlessly with the smooth tannin character from the Tenna. A blend of tobacco, cherry and oak fill the bouquest, augmented through this inspired secondary barrel fermentation then bottle-finished with Champagne yeast. Texas Harvest also finished as one of our strongest wild ale creations to date, at 9.0% ABV. 1500 bottles available.

Tasted from a bomber bottle in a wine glass.
L - Cool pink-golden color. Hazy. Bright white head with a pink tinge. It is fluffy at first adn persists as a thick sheet and lots of lace.
S - Aroma is strong barnyard on top of a fruitiness that could be grapes or red wine. The funkiness reminds me of a classic gueuze, but without a sharp, acidic bite. Malt and hops are not noticeable.
T - Initial flavors are a low acid tartness that flows into the barnyard funkiness and some oak. In mid to late palate the funk fades and grape juice flavors come forward (but without sweetness). The finish is dry with some red wine and alcohol lingering in the aftertaste. Clean and enjoyable.
F - Low carbonation. Thin to medium body. Hops bitterness not evident amid the low acidic bite. Alcohol is well hidden for 9%, but there is a moderate presence.
O - This is a clean and enjoyable fruity, funky beer. It reminds me of some of the fruit lambics put out by the classic producers, like Cantillon. An amazing creation from San Antonio.
