Got as an extra from tjmodica - many thanks! Poured from a wax dipped bomber into a pint glass. Released in November to celebrate their 1 yr anniversary. It was a dark brown color with no visible surface carb. It had a very small fizzy head that never covered the surface and then quickly dissipated. No collar and no lacing.
The aroma is a bit odd for a witbier. More toasted malt and honey than the standard coriander, orange and wheat. I'm OK with odd and/or non-standard aromas but something about this one just didn't mesh well for me. The taste followed the aroma with the roasted and light honey leading the way. Also some tobacco? Watery taste as well. Mouthfeel was watery with very little carbonation.
Overall, a bit of a disappointment after hearing alot of good things about Freetail. This one didn't do it for me but can't wait to try some of their other ones. R1

Bottle provided by thirdeye11.
Pours a nice looking dark brown with a tannish head. Very low carbonation. Aroma is Belgian yeast with some toasted malt and some caramel malt. Maybe a little citrus fruit, but it is very well hidden if it is there. The flavor is similar to the aroma with a little citrus, some caramel and roasted malts as well as alcohol. Very drinkable.

A big thanks to pwsoldier for the trade.
A: Pours a dark brown with some ruby highlights around the edges. A tiny bubbly head forms and recedes to nothing in a second. No lace.
S: This is odd. Lightly roasted, some honey, and citrus aromas. There is some liquorish. A strange mineral aroma as well. Nothing really meshes all that well.
T: Lightly roasted again with some honey. Lemony citrus flavors, and some spices. Interesting, it just does not mesh well.
M/D: A medium body that is creamy and smooth. Not hard to drink. I am having no problems finishing the bottle.
I am glad I got a chance to try this. I have had several Freetail beers, and I usually love them. This was a bit of a miss however. Very unique and worth a try though.

A big thanks to BeerZack for sharing this at the December Austin BA tasting.
Quite the interesting brew, Freetail's One is described as "the uncharted dark-side of Belgian-style Witbier...that, to our knowledge, has never been attempted before commercially."
Bring it.
Pours an attractively hazy, light brown body with burnt sienna at the edges. Miniature-pony sized head dissipates before the beer is fully poured, and swirling the tulip does little to resurrect it. Whole lotta' spice going on in the aroma---potpourri, tobacco leaf, ginger, coriander. My head is spinning, unfortunately not in a good way.
Flavor matches the aroma well, but turns down the spiciness a notch, which allows a pleasing note of toasted nuttiness to shine through on the finish. Mouthfeel is on the thin side and under-carbonated, although to be honest, One is probably better off having been that way; too much carbonation and the spices would be unpleasant. Overall, a pretty big disappointment from a normally solid brewpub. Freetail makes some amazingly good beers, but this just wasn't one of them. Still, it's worth a try.
