The wild side of pale, Sauvage is Rebirth Pale Ale base fermented with the Dirty Dozen Brett Blend (ECY34) entirely in French Oak barrels, resulting in woody and earthy notes. Sauvage is finished with not one but two encores of dry hopping. Because of the high level of aroma hopping, this beer is best enjoyed fresh, in good company, while getting a little wild.

A funky wild ale worthy of some offering from Jester King.
Poured from a bottle into a tulip glass. Slightly murky golden brown color with good initial head an lacing. Smell and taste of dry white wine. Tart apples with a nice earthy funkiness. Surprisingly good!

Poured from a 750ml bottle into a Teku glass.
Look is a bright clear orange/ amber with an off white billowy head.
Aroma is funky with definite barrel and citrus coming through.
You can taste each individual part of this beer the barrel, the hops, the Brett, and the pale ale base.
Excellent.

First had poured from 25.4-oz. bomber, printed "Batch # 3," gift from cousin, into tulip. According to the label, this is Rebirth Pale Ale fermented with Brett in French Oak barrels, and dry hopped twice. Not as sour as could have been, but the dry-hopping is excellent.

Clear Light copper pour with a big foamy white head. Great funky and sour aroma. Taste has flavors of brett, barnyard funk, wood, grass and a light fruity sourness. Stays fairly balanced resulting in a finish that has some funk, earth and light sour flavors.

This is much more than a tweaked Pale Ale, NOLA has made something here that is beyond a single style.
Funk, Hop, Sour, dry fruit, Dank, Cream, Kriek Lambic, all combine into a Gumbo pot of a brew. And it all works perfectly here!
Don't know why it's got such average scores. Maybe this batch is different then the rest or maybe it's being rated by its style, what ever that is? All I know is that this holds up to some of the top rated Wild Ales and Bretted up Ales out there.
