Bright and clear medium amber colored body; fine white head, fairly thick and frothy; patchy rings of foam circle the glass. Outstandingly beautiful aroma; fresh grass and spicy thyme; lemon notes; sour green apple. Beautiful sour and spicy flavors; thyme and coriander; apple pie; cranberries. Medium-heavy in body; velvety; excellent acidic tang; bright and fruity.
Wow! Definitely a sour ale yet with actual uniqueness and character that sets it apart from most.

a pretty fun beer right here, the latest on the weekly video call with the boys. its a neat orange color, short white head on it, a little cloudiness but pretty bright looking still, rust toned maybe. smells super funky, a little bit pickle-esque to the group, a hint of drill, tart and sharp white wine, more bacterial than wild or bretty to me, tannic, mouthwatering, some fresh herbal quality and still some lime from the galaxy hops, but its the thyme that stands out the most, not subtle at all here, which i dont mind in the least, i want it forward here, and it sure is! the flavor is thyme and white wine, pretty sour at first but my palate gets used to it quick and with the slightly more robust malt profile here, it seems plenty balanced and drinkable for something as uniquely flavored as this. i have a few thoughts, one being that i like the fermentation profile better than in other funky types ive had from these guys, maybe a few years in the bottle has helped with that. i also like the obvious thyme in here, i think it would have paired better with the galaxy hops when it was fresh, these never age great to me (so few do right? but these always stand out as weird when older for some reason), but i like the way its matured as a whole. seems woody to me, vinous, sharp, pretty clean for what it is. i lastly cant help but think the little character on the label looks like the shmaltz guy from the funky jewbelation series, so much so that i first thought this was a collaboration, anyone else? overall a cool beer for being so unique, pretty well made overall, and i think there is a neat synergy between the thyme and these specific hops, even if this only partially showcases it at this point. fun stuff, still lively in feel, maybe pricey for what it is, but its delicious if you like an herbal sour!

On tap at Central Market (Houston, TX), served in a shaker pint. Slightly hazy gold with only a modest fringe of bubbles. Tart aroma of vinegar and slight funk. Refreshingly sour flavour with white wine, vinegar, sweet citrus and slight earthiness. Light to medium body with moderate carbonation. Refreshingly and very drinkable sour.

Pours a cloudy golden color with a thin foamy head. Head retention is very mild, as is lacing. Has a big tart aroma and taste. Lots of herbal spiciness at the end (more so from bottle than draft). Light to medium bodied with moderate carbonation.
