this is one of the most unique beers i have ever had, and it really stood out to us all in a lineup of really exquisite beers! i love these guys. this is one of the only beers i have ever heard of to be made with persimmon, but it certainly features the fruit in a wonderful way. this beer is so unassuming, its truly a hidden gem! who knew such a thing was even possible. the beer is a light rusty orange color with a little haze but no visible sediment or particulate, and a lively white head that slowly settles. the persimmon is super forward in the nose and the taste, and would be nearly impossible to describe to someone who has never had a fresh one on its own. its bitter and citric, but its so distinct, fleshy and juicy and ripe in this beer. the flavor is amazing, somehow with a ton of sweet pale malts but then dried out like mad with a strong ale yeast of a floral belgian persuasion and a brett pitch, which really dries it out nicely, gives it a mild barnyard funkiness, and adds to the fruity complexion already cranking at full steam. its smooth and almost creamy feeling, lots of structure but not heavy, and an insanely sleepy 11% abv, what a sneaker! this drinks so delicate compared to what we are used to in strong ale, its just artistry at work. the brett and the persimmon together is a magical combination, and i get slight white wine and vanilla in here with them, just glorious. rarely have i ever consumed such an interesting and high quality brew, and this further cements my love for toccalmatto. a crowd favorite last night, and although its an exorbitantly expensive beer, the juice is definitely worth the squeeze. life changing in some ways...

Very light body and the overall taste was delicate and beguiling. The persimmon was very well integrated in a natural, well-balanced manner. Is this really 11%?
