Wit was brewed as a one-off for the very tail end of winter and made using specific processes and ingredients - namely sour mashing a portion of the grist, adding distinctly amaro-like bitter orange peels to the kettle, and employing open fermentation with a blend of two yeast strains. The beer is light but flavorful with a pleasant creaminess from both wheat and oats but finishes extra dry.

On tap at the Upright 7th Anniversary.
A hazy light orange with dense white head. Nose iss phenomenal. Bright, citrusy, spicy, grainy with wheat and coriander in beautiful balance. The palate opens dry, crisp and mildly grainy with wheat, a little oat slickness. Mid palate has coriander and orange peel, bright, clean and refreshing. Drying, crisp on the finish, a little thin/watery but excellent.
