Ives is a label we created for a series of "wild" wheat based beers rooted in the classics from Brussels. In typical Upright fashion, our take is not meant to copy an existing style or specific beer, but to use other examples as a starting point and inspiration. All of the beers under this label use raw wheat and an unusual mash process intended to slowly draw out the barrel fermentation and aging process, creating depth. This release blends five casks aged on very aromatic nectarines from the 2015 and 2016 harvests. A very ripe aroma gives way to more moderate but complex flavors on the palate, with the fruit and acids never overpowering the rest. This second bottling of Ives finishes refreshingly dry with slight minerality.

Bottle from the brewery.

A clear golden yellow with a dense, pearly white head with good retention and lacing, this looks great. The nose is spectacular. Think Fantasia but with nectarines, with a fabulous funk, lactic sourness and general Brett grass notes. Delicately ripe and fleshy nectarines pair nicely with gentle floral notes of Tiaca honey, a touch of almond, along with the classic Upright funk blend, a beautiful balance of delicate cloves, a little hay and a mild pineapple fruitiness and just a wisp of white Balsalmic vinegar. I can't overstate how sublime the nose is, it has characteristics that remind me of a 2-3 year old Deviation.

The palate opens sour with a nice blend of clean lactic sourness, a raw nectarine sourness and just a touch of lemon before the mid-palate brings in flavors of honey, ripe nectarines, mulled apple cider with a little clove, a mild phenol note and some grass. Drying with a potent sourness and a firm nectarine skin tannin character on the finish, this is soft on the palate with the acidity providing the necessary firmness. Drink this soon if you have it.
