Kopstootje is a beer we've done draft only on occasion since 2011, beginning as a collaboration project with Jacob Grier. He approached us with the idea of producing a beer formulated to pair with the Dutch national spirit, genever, and we put together a unique recipe starting with a biere de garde but incorporating many grains and spices commonly found in genever. This release is the first time the beer has been bottled, but it also differs from previous batches in that it's aged entirely in local vermouth barrels, lending a wonderful floral aroma while oak tannin and light fruit notes of rose and strawberry land on the palate. The spices in the beer have softened over the aging process, making for an elegant profile that still shows an edge with pleasant acidity and a very dry finish.

a gorgeous little bottle of beer here, aged in vermouth barrels. its dry, tart, spicy, and distinctive, herbal to me, mature, funky, and really weird to the extent that i can hardly set my glass down, it has my full attention. that said, i think overall its a little less well refined than the best of their beers, and while it fits in nicely with their lineup, this one stands out more for flavor than for outwardly insanely high quality, which is how i usually recognize upright brews. a fuller color to this, a high rising but quick fading head, but plenty of carbonation in the drink. smells and tastes like wet oak, white wine, dessert wine, spruce, citrus zest, coriander, white pepper, green grape, tart apple, clean lemon, some richer malts, light brett, really dynamic, with the vermouth more and more evident as it warms. decent acidity, but also plenty funky too, best of both worlds and a very mature and interesting fermentation profile overall. spicy and sweet in the middle, tart and dry at the end. a little rugged and raw to me, complex as it is, but another immensely interesting beer from upright thats well worth picking up. i love all they do!

A mildly hazy orange with an off white head with decent retention and lacing, this looks good. The nose is outrageous. Funky as hell with citrus, spice , ginger and vermouth. Palate is tart, vinous, bright,, with mild tannins. Rose and strawberry notes are present. The spice blend really pairs beautifully with the citrusy vermouth notes, especially on the palate. Medium-light in body, moderately carbonated, this beer has a long with with vermouth, some funk and citrus. Excellent stuff.
