This release blended six casks that showed aromatic balance and moderate acidity in barrel before bottle conditioning. The finished beer opens forward in the nose but softens as it warms, yielding a profile both simple and complex, capped by a notably dry finish.

Thanks, Sam!
A clear gold with a dense white head with good retention and lacing this looks great. The nose is excellent. Bright and funky with a noticeable lactic acid, wheat, oak tannins with vanilla, a little petrichor, a little preserved lemon, this is pretty deep. The palate opens sour with a prominent lactic acid with a little bit of preserved lemon. Also present is the characteristic lactic acid bacteria fatty notes that you find in charcuterie. Along with this is stone fruit character with peach and nectarine. Funk is moderate with earthy notes present. Mildly sweet, the palate isn't completely cohesive, there's a looseness present. Moderately carbonated with a long finish with lingering lemon and lactic acid, this medium light bodied beer feels just a little watery on the palate. Tannins are reserved. Excellent.
