Kopstootje is a beer that began in 2011 as a collaboration project with spirit enthusiast and professional Jacob Grier. He approached us with the idea of producing a beer formulated to pair with the Dutch national spirit, genever. We put together a recipe starting with a bière de garde base but incorporating many grains and spices commonly found in genever, including allspice, aniseed, angelica root, juniper berries, cloves, bitter orange, and ginger. This vintage is aged two years in vermouth barrels, lending floral aromas while oak and notes of rosè and strawberry show on the palate. One of our most unique releases, the Kopstootje is both complex and fun. Try it with genever for a complete experience!

What an interesting beer. Dark copper body, effervescent and nicely carbonated, medium dryness. Has more in common with rouge vermouth than extra dry. Sweet, floral and spicy. Light acidity, a bit of grain, spices including star anise, which I don't love.

Amber with a dense, off-white head with excellent retention and lacing, this looks gorgeous. The nose is fabulous. The integration of barrel and malt is astounding here, and the fact that there's the botanical character is just incredible. Rose, strawberry, a light clove, a rich, doughy base that age has lent a touch of oxidation to. As it warms up, notes of lemon, preserved fruit, a tropical note featuring pineapple and guava appear. Theres a prominent rather butterscotch like note, a blend of toffee and cream, that just shouldn't work, but does when you add in the vermouth notes. A touch like an oxidized, fortified wine in a good way, the nose is incredible.
The palate opens tart, with the base Kopstootje clear, with the herbal and Botanical notes quite prominent but also with a soft rounded, doughy, creamy feel. Moderately funky with the Upright house character, there's a blend of Brett derived clove and pineapple with an ethereal softness. Soft, creamy, cogent, structured. Brilliant. Preserved lemons studded with clove linger on the finish. With reserved acidity, this is harmonious.
