On tap at the brewery in Champaign, IL. Poured in a tall Pils glass.
A: Pours a cloudy golden/yellow color. A towering, dense white head forms with excellent retention. Lace is left all the way down the glass after each sip. This is a stunning looker.
S: The Saaz and Hallertau hops are perfect. That mix of spicy, grassy. even slightly fruity hops is awesome. Biscuit malts, and again, incredible. Superb simplicity that I can not get enough of.
T: Like the nose, those incredibly simple German hops are perfect. Grassy, lightly fruity hops at first. That becomes spicy and dry, with a touch of bitterness. Biscuit malts in the background. Perfect balance, perfect malts and hops. Really impressed with Blind Pig's interpretation.
M/O: A light body that is beautifully carbonated. Effervescent, crisp, and smooth at the same time. Amazingly clean. Not to mention, wonderfully dry. So very much moreish. Many pints later, I am still in awh, I am at a lose...
Every time I make a visit here, I find something incredible. It could be something off the wall, or it could be one of those perfectly traditional styles. This is the later. I can't tell you how impressed I am with this offering. About as good as any brewery has come to this style in America.
