Our take on the Southern California style IPA. Hopped to high heaven with Columbus and Simcoe hops, and dry hopped with more Simcoe.

12 oz. bottle hand carried to Texas
Appearance: Murky amber orange glass holds a thin white cover that laces well.

Aroma: Citric hops, grapefruit skin, lime, with a crystal malt base coming through.

Taste: Same profile as the nose, more sweet base comes through, not a lot of hop flavors but some bitterness comes in during the finish. Fairly balanced profile, meaning low hop levels for an IPA.

Mouthfeel: Medium body, low carbonation, slightly gritty texture, warm finish.

Overall: Maybe the Hazy IPAs have thrown me off on what to expect from hop profiles, but this seems to have low hop flavors with a firm bitter finish. Not a bad beer, nothing seems off, but my socks remained firmly on.

Thrilled to write my first Blind Pig review.
a) Pours hazed light golden body with a spritely head that laces and lasts.
s) Big bright aroma filled with pineapple, grapefruit, flowers, tropical fruits.
t) Big and follows the nose, with big grass, flowers along with citrus, and tropical fruit flavors. Nice light biscuit that's balanced by building wave over bitterness. A real IPA.
f) Medium body, crisp and effervescent, on the lighter side, finishes dry. ABV well hidden

I can't believe I have not reviewed this yet. I have had this many times on tap at the brewery in Champaign.

A: Pours a hazed golden/orange color. A two finger white head forms with good retention. The head eventually recedes and leaves rings of lace behind.
S: Big and bright grapefruit aromas. Citrus, grassy, floral hops. Tropical fruits emerge as well. Mango and especially pineapple. At first this is fairly pungent, though it does not linger. A bit of biscuit malt as well.
T: Big hops like the nose. Grapefruit, citrus, and grassy/floral flavors. The bitterness is a bit more prevalent. Tropical fruits that follow the nose. A very light biscuit, malty flavor.
M/D: A medium body that is crisp and effervescent. Just a bit on the lighter side. Though still very dry. So easy to drink. Even for the non hop head. For a regular IPA, this is up there in alcohol. Though, I always find myself with a few pints when visiting.

For a non hop head, this is very well made. As close to a regular as this brewery gets, and it is a good one. Maybe just a tad light in body. Though, still something I usually always get when visiting the brewery/pub when available.

Pint served from a tall narrow tank behind the bar.

Deep saturated bright orange, slight haze, trails of rising carbonation visible. Frothy white foam that left a crown of delicate lacing at first, then concentric rings down the glass.

Big citrusy whiff, definitely in the west coast style. Very pungent grapefruit, hugely citrusy and resiny green hops on display.

Bracing hop bitterness, more grapefruit and citrus rind flavors, with an ample undercurrent of pale malt balancing things out. Sticky, resiny, and lip smacking. Light enough to quaff, but you want to take your time and enjoy the bright citrusy hoppiness.

Wish they made enough to growler this! A stellar IPA (far better than the IPA at Destihl down the street). We were able to meet Bill the brewer, and chat with him for a bit. A really great addition to the local beer scene. Cheers Bill!
