Thanks to moose3285 who sent this, along with the delicious base version, & I’ve allowed this one to languish in the fridge forever. No longer. 750ML bottle split with my wife, who’s not keen on saisons. Or brett. I won’t tell her what it is.

The pour is one beat off the color of a yellow M&M, just less yellow #5 vibrancy. Carbonation is low enough for me to notice. The nose brings a house of dry brett, wild honey, pepper, & a lot of lemon. Nose is more complex than a lot of beers taste.

Saison du Swamp with Brettanomyces is my kind of saison – not, you know, dry-hump boring. The nose tees up what the taste drives: lots of lemon, & the brett gives it an air of desperate dryness. Underneath is a nice peppery whisper, sweetness that I’m going to attribute to bee poo, rough graininess. Light hay, citrus, on the end & just a long sand slide of drying. This is no sipping saison, this is a saison that should be served in 40s. Despite the low carbonation, it’s making belch in my belly.

The extreme drying quality is really the only component of the brett that comes to the surface here – or perhaps after a recent close encounter with Seizon Bretta, perhaps my brett palate is shot. A very good beer with some nice levels of tastiness.

750ml into a tulip. The brew appears a clear golden yellow color with a solid white froth. Some patchy lace sticks to the glass as the cap fades.

The smells includes plenty of tropical brett notes that gets dry and yeasty with spice like pepper and some bready grain. There is an herbal element before getting faintly cheesy across the back like footy pils/sulfur.

The taste is dry and spicy with a lot of brett earthiness and pepper/straw grain aspects. Some herbal bitterness and a fruity complexity like pineapple blending to more tropics then apple and pear skins.

This is a light bodied brew with moderate spritzy carbonation. It is super dry, crisp and crushable. The awesomeness of this brew is in the simplicity and subtlety yet amazing drinkability factor. I would crush this regularly if given the opportunity to have it on hand at all times. Great stuff right here.

Pours clear pale golden yellow (until I stir up the yeast at the bottom). 1.5 fingers of white head, good retention, decent lacing.

Smell is awesome. Spicy saison yeast, earthy brett funk, and honey sweetness. A light floral touch in the back. Lovely.

Taste is bright and varied, with all sorts of interesting things going on. Peppery spice, floral lightness, fruity sweetness, and a soft bitter touch in the finish. Fantastic.

Feel is even better than the taste. Light-bodied but expansive, filling my mouth with flavor just like I want it to. Carbonation is perfect. Prickly and tingly up front, relaxing to foamy and buoyant as it progresses. Excellent.

This is potent, delicate, and massively varied. Such a well-crafted beer. My new almost-favorite brett saison, just a small notch below Boulevard's Saison-Brett.

750ml bottle from the recent fall 2013 release. Thanks to R.J. for sending this one as an extra. Poured into a Surly goblet today, 1/20/2014.

App- bright yellow, hazy and juicy looking. Effervescent with a very large head that takes time to dissipate, still has very good retention and never truly disappears. Lots of lacing.

Smell- crisp, Brett funk, faint citrus, peppers, some bread.

Flavour- also crisp but a bit on the sweeter side of a saison. Bread, brett, citrus, slight vegetal pepper quality, hint of ginger.

Mouthfeel- medium bodied, very good carbonation, none-too-dry finish of characteristic Brett funk. Good amount of body, would have preferred a bit less of a body and more drinkability.

Overall- very good saison from down south. Complex but I miss the tartness and drinkability that comes with Hill Farmstead saisons. Will have to try the non-Brett version.

I recently had the chance to visit Swamp Head and fell in love with the saison du swamp. On the way out the door, I picked up a bottle of the brettanomyces variant. The saison character is comes through, with fruitiness, spiciness, even a little nuttiness, but now funkafied more, with some brett character. This is a very complex beer and I wish I could have some more time with it.

A - Pours a cloudy, medium orange with a fluffy white head that fades slowly.

S - Funky with lots of Brett, citrus and fruity.

T - Brett hits hard, then some subtle citrus, saison yeast and bubble gum.

D - Good carbonation with a lighter body.

O - Nice Brett-Saison, light and welcoming with the Brett and Fruitiness playing well together.

Pours a cloudy desaturated orange, one finger thick fizzy white head settled quickly to a thin ring. Smell: bretty barnyard funk, doughy, pepper, white nectarine, white grape juice, grassy. Taste: sweet orange citrus, wheat twang, grassy, graham crackers, coriander. Medium bodied, right carb. The brett character is not "mild" but it's very well integrated into a delicious beer.

750 mL bottle poured into a snifter.

Appearance - Hazy light orange. Decent white head. Medium collar.

Smell - Hmm. Citrus and vegetables. Odd. More citrus than vegetable, but it's still there. Apples. A hint of brett.

Taste - Again it's got a lot of citrus and apple. Very fruity. Some vegetable notes though. Grainy. Pale malt in the finish. I don't get a ton of brett.

Mouthfeel - Medium bodied. Medium carbonation.

Overall - I had an old bottle of the regular version of this and it was a brett monster. I'd be interested in aging this. Maybe those weird flavors will pass.

Straight pour from a 750ml/25.4oz pry-off bottle to an oversized wineglass (Jester King stemware). This is a bottle from the original release in 2013, and it’s been in good care ever since purchase nearly two years ago. It’s been refrigerated for a couple of weeks now, so it’s had time to settle nicely.

Appearance (3.75): First off, this is a bit of a foamer—and if I reckon, it was two years ago, too. The head piles up two fingers of crackly white foam, capping a hazy golden body with orange highlights. It looks a lot like passion fruit juice, actually. Not a lot of lacing to speak of, and it leaves just a thin collar at the edge of the glass. It all dissipates as time goes on, leaving just the orange-gold body. It started beautifully, and ended average-ish.

Smell (4.5): Passion fruit, sweet limeade, a modest, funky twang on the back end, and a subtle, musty layer of barnyard underneath it all. If I’m not mistaken, this has got a lot of Brett C all over it, along with a nice, solid base of American-style saison—wheat malt, light coriander, tangerine, rustic country bread, this smells fantastic.

Taste (4.5): It deviates from the aroma in that it’s not as sweet as all that tropical fruit would suggest, but it picks up that funky twang and turns it into a full-blown, citrusy bite. Not bitter like citrus rinds, but tart and funky like orangeade stuffed with edible flowers. A little chamomile, maybe? Dry, floury biscuits in the malt character—but this beer is bone-dry. In place of any substantial malt body, the brett’s developed a nice base of musty, bucolic funk. Grassy, floral bitterness in the finish melds with the bretty twang that’s developed over time, and in the end it makes for a dynamic, multi-faceted saison. This is outstanding.

Mouthfeel (5.0): Carbonation is very active, covering all surfaces with a blanket of fine, tingly bubbles that sticks closely until the wash out, where it foams up easily and turns a modest sip into a satisfying swallow. The body is about spot-on for medium-weight, but its dryness belies any heft or slickness that might accompany a beer of this size. As a result, this is insanely easy to drink.

Overall (4.5): I reaaaaaaaaaaally like this beer. I had it fresh two years ago, but I was camping in the mountains of North Carolina and wasn’t about to sit down and write detailed tasting notes. Back then, it was fruitier and a little clearer, if I recall, but the base beer was already a year old at that time. I liked it slightly better back then, but fortunately, it’s aged extremely well and still tastes fantastic. This is a beautiful beer—easily one of my top-five in 2013, and easily one of my all-time favorites still today—and I hope Swamp Head continues to make it, even if only sporadically, for the foreseeable future.

Bottle from the Wetlands. Pours a hazy yellow with small, quickly receding head. Aroma is sweet and sour citrus, white grape, musty funk, tart cherries. Flavor is more sweet than sour, with pears, white grapes, and plums. Finishes with some green apple. Dry finish with effervescent carbonation. Lingering hay and funk on the palate and some wheatiness. Overall not bad, but expected it to be more sour, given the aroma. Wondering if leaving this in. The bottle for a good while will sour it and clean things up.

Reviewed from notes. Had on-tap at the Swamp Head tasting room. Served in a snifter glass.

A: Hazy deep yellow, with a half-finger of white head and a few big bubbles crawling up the sides of the glass.

S: Tart, earthy, yeasty and funky. Lemon and wheat with some grass and herbal notes.

T: Tart Brett presence dominates up front. Some juicy lemons, a nice light malt with wheat and some grainy character, then more grassy barnyard Brett funk at the end. Dry finish.

M: Light body, good carbonation sensation, low alcohol presence.

O: This is really quite good as it is, but I think it's going to need a little time to let the Brettanomyces presence meld with the other flavors. It has some room to grow - so I took home a couple bottles.
