The last of my Christmas box set of Chimay beers. Slightly hazy, light copper color with a foamy white head. Aroma is light but clean with what seems like a bit of saline air. The flavor is elegant with rich maltiness, light peaches, hay, vanilla, and toasted almonds. The body is very creamy and smooth with a dry finish. Some dry, yeasty bitterness in the upper part of the mouth to balance the honey and caramel sweetness. Finishes dry and lightly sweet with residual hay and nuts. Wow, this is just an excellent Belgian beer and one I look forward to trying again.

Chilled bottle bought at super u in Saint Martin , poured into a dof glass produces a translucent orange yellow liquid with a solid one finger of white shaving cream , great retention
Aroma is spicy, coriander
Taste is yeasty, spiciness, coriander, tangerine citrus
Sudsy mouthfeel with a dry quenching finish

Hazy muddled orange with a creamy, thin, off-white cap. Thick sheets of lacing. Big banana and light pear and pepper in the nose. Similar tasting. Surprisingly clean finish, very light cardboard, vanilla and banana linger. Medium to full bodied with tight carbonation. Not bad, but not to the level of some other Belgian tripels.

Rich 2-3 fingers white head with excellent retention.
Amber-golden, cloudy beer, medium carbonation, micro bubles.
Smell, breakfast pancakes, little cellar fungus, slightly floral notes
Taste, sweet floral notes at first, than citrus tanginess kicks in and after that hoppy bitterness.
Drink with small sips.
Lovely mouth feel.
The aftertaste is a little bit too rough on the edges for me to give this an honest top score.
But a very good triple and with 8% abv not too heavy.

Appearance: Cloudy orange with a short-lasting white head.
Smell: Roasted malts, clove, spices, alcohol.
Taste: Clove, coriander, roasted malt, walnuts, moderate to high hop bitterness with some astringency.
Feel: Good body, moderate carbonation.
Overall: A very good strong Belgian ale.

This paired excellently with a traditional Thanksgiving Turkey dinner. Beautiful pour, lots of frothy cream colored head. Slight haze to the golden orange body. Excellent head retention with some nice lacing. Bottle art is simple but elegant.
Tropical fruity notes of pineapple, overripe banana, pear and white peach, coconut, caramel and cognac. A metallic copper note comes across on the finish.
Fruit forward on the palate as well, with lots of overripe pear and peach, followed by banana and coconut, backed up with a roasty malty bitterness, akin to dark rye bread.
The metallic note comes across to the mouth at the finish here as well, but a touch more subtly. It also keeps the finish fairly dry. Medium-full bodied.
I've had this many times, and I'm so glad it's still affordable in this crazy beer market.

At my lady Pamela's house; bottled and slightly chilled, 330mL in a pint glass. From the Huron Church Rd. LCBO in nearby Windsor. Best before March 2027. My third beer from the Chimay, Belgium brewery, and for 2025. With Sundae the cat...
