This is a "Champagne style" brew with an enzyme (amylase) to reduce the residual sugar. Appearance is very pale and hazy yellow with a fine pile of foam in the half-litre nonic. Light herbal and straw aroma with a green, leafy nose.
This has the mineral finish and drying sensation of Belgian yeast, but apparently that's not the yeast. Clean and tangy with a very nice hint of peach. Light body, pleasantly frothy on the tongue.
This is hard to categorize. There is some IPA bitterness but it's reminiscent of a scratchy Witbier with more of the malt than a Pale Ale. Lemony, tangy, highly quaffable. A collaboration with Social Kitchen in San Francisco. On tap at Tiger Tiger in San Diego.
