Pours murky dark brown with big clumps of yeast whirling around. Medium-sized off-white head. Settles as 1 cm thick layer of foam. Moderate lacing.
Aroma is strong, sweet and metallic. Dark Chocolate, dark sweetened fruit, metallic alcohol and earthy, yeasty spicyness.
Light carbonation. Medium thick, soft, velvety texture.
Flavor is heavy sweet followed by strong bitterness. Aftertaste is bitter sweet with a small overweight to the bitter side. Lingers for a while.
Sweet, boozy Winter Beer.

Bottle: Poured a dark color ale with a large light brown foamy head with good retention and some light lacing. Aroma of caramelized malt with dry figs and raisins notes with light fruity ester. Taste is also dominated by light fruity ester with some caramelized notes with some dry fruits notes. Body is quite full with good carbonation and no apparent alcohol. This is a well-balanced effort without too much residual sugar showing up.

On tap at Lucky Baldwins Trappiste in Pasadena, CA.
Pours a murky crimson-brown with a foamy dark khaki head that settles to a partial film on top of the beer. Small streaks of lace form around the glass on the drink down. Smell is of malt, dark fruits, brown sugar, and spices. Taste is much the same with a brown sugar flavor on the finish. There is a medium amount of spice bitterness on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp and medium bodied mouthfeel. Overall, this is a pretty good beer but the flavors are quite strong and slightly harsh for some reason.

Pours a deep amber to black in color with a small off white head. In the aroma, a light spice and dry caramel. In the taste, a mix of fig and raisin juice. Quite quad like, with notes of Christmas spices. A spice bite, but mellow, and a medium to lighter bodied mouthfeel, with a small dry spice in the aftertaste. A mix of a quad and a Christmas beer, mellow spice, and I dig it!
