Served on-draught into .5L stemware at Ale House, Sofia. Cost was 6 BGN per litre.
No bubble show forms as it's poured.
HEAD: 5 fingers worth of height. White colour. Has decent thickness and creaminess. Okay complexion. Spotty lacing. Good (~10 minute) retention.
BODY: Cloudy yellow-copper. Murky and dull. Lacks vibrance. I see no yeast/sediment within. For a "live" beer, it sure doesn't look real lively. Not particularly appealing.
AROMA: That smells delicious. Lively yeast, fresh wheat, hints of lactic acid, residual sugars, smacky funky yeasts, light sour twang, bread dough, obvious mild acidity, lemon, damp sourdough, and biscuity vitamins. The yeasty emphasis is lovely...definitely seems like a lively brew teeming with yeast. I can't wait to try it.
Aroma is moderate in terms of strength.
TASTE & TEXTURE: Yeasty as hell, with a nice wheat and helles malt backbone. Unfortunately, the sourdough is toned down in comparison to the aroma.
I find no overt alcohol. Lacks any off-flavours. No hop flavours are present.
Mild lemon twang. Lactic notes. Funkiness gives this Bulgarian brew some edge over the boring lagers lining supermarket shelves in the country. Well balanced and very enjoyable.
Delightfully soft on the palate. Smooth, wet, refreshing. Light-bodied. Has a good overall presence on the palate despite slight overcarbonation, complementing the lively flavours well.
Not oily, gushed, hot, boozy, astringent, harsh, rough, or scratchy.
OVERALL: This beer definitely reaps the benefits of a lack of filtration and rejoices in the delights of its lively yeast(s). I'm enjoying it far more than I imagined I would and would recommend grabbing a litre or two when in Sofia. Definitely worth trying...you'll get your vitamins!

(Notes of 05/2013) Tasted at the “Ale House” in central Sofia, served on tap (the taps are all fitted against the walls, linked straight to the central conditioning tank, I was told). Due to the fact that my wife and I were the first guests since the place was open (11am), my drink first came with a lightly funky and sour edge that can only be caused by the bacteria-effect in the pipe, i.e. the left over beer left in the pipe. From the second pour onwards the quality was fine.
The beer is a bit like unfiltered Helles lagerbier which underwent only a very short period of lagering. The colour comes dark golden with haze, topped with a rocky foamy white head which lasts pretty well, against fine carbonation. The nose is wet bready, herbal hoppy, dusty, backed by yeasty acidity at a moderate scale. On the palate, the hop flavour is more pronounced (Hallertau/Hersbruecker), against bready and grainy lager malts with fine sweetness, while the wet toast, moderate hop bitterness and lightly spicy, phenolic and sour dough-ish mouthfeel as of yeastiness linger in the end. All in all, this is a medium bodied lager beer benefiting well from the unfiltered condition, adding extra yeasty pleasures to the otherwise potentially boring palate.

Notes: This was advertised as "Zhivo Pivo" (Live beer), and is unfiltered, unpasteurized, and without preservatives.

A: Huge pure white head, 3 fingers thick with great retention. The beer is a somewhat clody golden orange color.
S: Aroma is biscuity malt, with a somewhat citrusy undertone.
T: Great balance. Hints of lemon in the middle of a big bready taste. Finishes with a good balanced malty character and a touch of dry bitterness that leaves you wanting more.
Overall: A smooth and refreshing beer with huge drinkability, and a great alternative to the euro pales found pretty much everywhere in this country.
