A: Dark brown, molasses colored. Slight haze with a light tan head. Well carbonated. Ambact always has a nice dose of bottle conditioner.
S: Rye bread. Slightly stale tasting.
T: Malty, rich and complex. Yeastiness jumps with a subtle bacteria twinge in the belgian style with a honey sweetness and a bit of vanilla pastry. Sweet at the end with hazelnut and crusty bread finish.
M: A little unusual. Somewhat sticky and viscous, almost syrupy. Clings to the glass with each swig. However it dissolves quickly when consumed.
O: This beer has a lot going on. The wide variety of flavor profiles kept my interest all 22 ounces.

Poured into a Gulden Draak tulip. Pours a cloudy medium yellow orange amber with a half finger medium off-white head that slowly dissipates leaving lacing. Sweet malt aroma with light fruit and a touch of Belgian spicing. Taste is somewhat dry; light fruit, sweet malt, finish is dry with a quite distinctive crackery bitterness and hops. There is definitely a dry wheat/matzo element to the flavor. This seems somewhat like a cross between a tripel and a saison. Finish is bit drier then I prefer, but overall an interesting flavor progression and a very interesting and different take on the style. Well made. I will definitely try Ambacht's other beers.

22 oz bottle, picked up just before Easter/Passover week (at Concordia New Seasons) and enjoyed on an overcast/cool mid-May Sunday. Poured to a pint glass, though a tulip could have been more appropriate.
Per the label: 'Bottled: 9 Aug 2010'. But just arrived on shelves late winter/early spring? Interesting...
A: Lightly hazy golden, tinted on the orange-y side. Modest half-finger head, fizzy and a shade off of 'white'. Crackles for a minute of so, fading all the while to a fractured creamy skimcoat. Good carbonation, steady but random streams. Lace is alright, an undulating ribbon with a straggling dimpling.
S: Sweet and fruit-filled, at first. Some apples and tropical fruit, definite 'honey'/'graham cracker' malty sweetness. Confectioner's sugar, clover and many things sweet. Nice, if just a little simple.
T: Adam's review before mine noted a saison-like character; I see that. Grassy grains, flowers and orchard fruits with a less-than-subtle mineral bitterness/hopleaf finish. This actually reminds me of the homebrew a friend and I just finished making...which is to say we're either burgeoning pros or that our recipe just happened to have a lot of similarities, taste-wise.; certainly NOT a slight toward Ambacht.
M: Crisp and a bit on the effervescent side before a thickening, lip-smacking maltiness and dusty dryness settles in. Medium body, but seems to grow heavier as sipping progresses.
O: Likable and quite easy to drink. Grabbing this bottle on a whim, I had no idea it would be a lovely Belgian Pale (given a name honoring Passover and a 'Matzah' adjunct, I somehow thought differently). Honestly, drinks stronger than its 6.5% weight: think Duvel, sneaky and bad-ass Duvel. Not quite the same, but in a similar vein. These guys make good Belgian-styled beers - here's another example.

Bomber picked up at the brewery, poured into my large Gulden Draak tulip. Matzobraü is a hazy dull gold with a white head leaving pretty nice lace.
Smell is grainy wheat, spicy esters with some banana as well, and a touch metallic.
Taste is good, nice integration of the wheat, which is not grainy, and the esters, which are a bit fruitier then the nose. The metal is gone as well. Nice minerality gives it an authentic saison character on the finish.
Mouthfeel is on the drier side, but not bone, with a light body. Could use a crisper carbonation.
Drinkability is very good. Tasty, smooth, no off-flavors, well balanced, it's a good session ale that washed down bbq perfectly.

Mouthfeel is on the drier side, but not bone, with a light body. Could use a crisper carbonation.
Drinkability is very good. Tasty, smooth, no off-flavors, well balanced, it's a good session ale that washed down bbq perfectly.

Appears hazy orange/ gold color with about an inch of white colored head.
It smells slightly fruity, yeasty, and peppery and a bit bread like.
It tastes of fruity peppery east. There is a bit of dry bread like flavor as well. There is a mild hone taste that adds a bit of sweetness to the ale. There is a slight alcohol flavor in the end.
The carbonation is quite high. Maybe a bit too high.
The drinkability is pretty good. Though the alcohol like aftertaste is a bit off putting.
Overall a pretty good beer that is somewhat creative.

It tastes of fruity peppery east. There is a bit of dry bread like flavor as well. There is a mild hone taste that adds a bit of sweetness to the ale. There is a slight alcohol flavor in the end.
The carbonation is quite high. Maybe a bit too high.
The drinkability is pretty good. Though the alcohol like aftertaste is a bit off putting.
Overall a pretty good beer that is somewhat creative.
