I'm aware of what a Bock beer should be like but seems I haven't fully understood the idea behind Aufsesser Bock when first tasted hence another review that will hopefully do justice to the beer.
Pours deep coppery to amber with two inches of creamy beige head that sticks to the walls as it fades to firm cloth. A rather mildly sweet aroma shows moderate bread-crust qualities and hints of caramel. The flavor exhibiting rich bread crust contributed by melanoidins starts malty-sweet, however the initial supportive role of hops gradually increases towards the medium-dry finish that features lingering bitterness and slight roasted/burnt tones. The later are not entirely appropriate to the style yet remain restrained enough not to ruin otherwise well-crafted beer. Good balance, revealing genuine craftsmanship behind the beer.
Body is medium-full with fine, a tad too soft carbonation.
In short, a characterful Bock with pronounced bread-crust qualities with burnt undertones that seem to be the brewer's trademark (500 ml swing-top bottle into pint, BB 07-23-2013).

Likewise Aufsesser's Dunkel their Bock too exhibits unexpected overt roasted malt character. Pours clear amber with thin foamy beige head that holds well.
The nose is malty containing well-baked bread crust with forementioned burnt notes and faint alcohol.
Flavor is initially sweet with significant roasted malt qualities. However, the malt is sufficiently attenuated and the sweetness gets soon overshadowed by assertive hop bitterness lending medium-dry finish, followed by lightly bitter aftertaste. Medium bodied with loose carbonation.
Some may like the Schwarzbier-like roasted character of this beer but considering the style this is inappropriate and only adds negatively to the overall impression. (500 ml, BB date 07-10-2012, into tulip.) 3, 3, 3, 2.5, 2.5 = 2.85

Pours a nice dark amber with a moderate head that hangs around. Definitely looks the part of a nice German bock! The head remains for awhile and it is very tasty!
