one of the best seattle brewery beers, a special pils, slightly reminiscent of the original from lagunitas, but lighter, less bitter, and brewed with a special hop called adeena that i believe was developed in the northwest to mimic noble types, for exactly this purpose, its been around a few years but is still not really as common as i thought it might come to be by now, way cool hop, and this is a cool showcase of it while otherwise being a rather traditional pils, lovely beer and massively drinkable! yellow straw colored, bright and clear, with a lasting inch plus of heaving white head. the nose here is so fresh, so alive, so new, its gorgeous. i get cut grass, clover, light herbal spiciness, and a minimalist and earthy grain profile thats slightly european, and also crackling dry, a little something from the yeast but relatively subtle, this is cohesive, radiant, and super clean. the flavor is so well balanced, mellow and crisp, the yeast is more in the taste than the nose, woven all through, a faint honey whisper, the hops are not all at the end either, and they ramp up as this progresses. proper snappy finish, bitter enough, refreshing even quenching, and with fantastic carbonation. one of the classics from the seattle spot, they should consider doing this one down in petaluma full time...
