a stunner from the seattle brewery, a light and summery wit, done with lime and coriander but most importantly southern cross hops, this one has one foot in authenticity and tradition and one in modern american playful innovation, i loved this, it could definitely be a regular from the mothership. clear for the style, almost looking more pils than wit to me, very very pale and light in tone and body, an airy white head on top although not quite belgian level height or retention. the nose is amazing, super fresh, not something i think of often in this style but with the obvious honeydew and lime leaf notes of the hops, the slightly piquant lime addition, and the easy grain base, this really calls my name and presents as brand new. the yeast is neat, compatible of course, this is really smartly engineered, hints of black and white pepper, but more black, lemongrass, and subtle fresh dill, even the yellow dill flowers, its vibrant and springy. the flavor follows, perhaps a little less wheat flavor and texture than anticipated for a style normally built on that, this definitely has a kind of crackery pils type grain complexion, but the lightness lets somewhat soft handed hops pop, light elderflower, now the coriander, tulips coming up, wet grass, a noble hop thing too almost, just faint herbal bitterness late, a little lemon from the yeast, the esters with the hops are awesome, and its so dry and drinkable, trading that traditional creamy feel for an impossibly quick and crushable minimal feel. really really good, unexpected in this style from lagunitas, but its fire, puts the old stoopid wit to absolute shame, and really should exist on a larger scale. gorgeous.
