real neat beer here, somewhat subtle on the extras, but well made and real drinkable, not too sour. the base beer is sort of aunt sally-esque, not super tart but clean and citrusy on the lacto pucker, wheaty and fluffy feeling, without being objectively malty or heavy in the least, and this version seems to substitute a little plum and jasmine for the dry hopping, not a lot of hops to this. the salt element is real light, more minerals than anything, drying at the end i suppose, but kind of wrapped up with the bacterial aspect and the fermentation profile overall. the plum is minimal to me, a light generic berry thing in the nose, more blackberry in the taste, tannic and tangy without being all the fruity really, the grain and the citrus notes of the sourness are definitely in front of the plum, and this is dry enough where it doesnt really hit late either. the jasmine is similarly reserved but quite a lot more appreciable to me still, fresh and springy in the nose, not a perfume thing at all, and adding a little herbal bitterness to the back end of this along with an uplifting natural jasmine exclamation right at the peak of the acid, really neat moment for it to hit, and it fades slowly, lasts later than the rest of the beer on the palate too, but only by a second. medium body, warms up more dynamic and layered, and stays drinkable for the style with the pucker held in check some. lemon and an almost cranberry thing to finish, a flash of the salt, and the soft obvious jasmine. really clever, right for spring and summer.
