The color after 4 years of cellaring is a muzzy copper color with the head is smallish in size, the texture spumous, and the color off white and as it evanesces in the blink of an eye the residual lace is almost non-existent. The aroma of over ripe fruit such as plums with hints of caramel, bourbon like, sweet malt, pleasant as noses go, front is sweet, nicely malted and the top middling in its feel to the palate. Finish is unimpassioned in its acidity with the hops pleasing and mild in their spiciness, aftertaste vinous and quite dry. The beer at 8 percent ABV after four years of cellaring definitely a “Belly Warmer”, and one I think well worth my waiting for New Year’s Eve 2003. I will dedicate this “Beer” to all those who have served this country “Past, Present and Future”, and hope this “New Year” will bring “World Peace”, and that all of the Brothers and Sisters on planet Earth learn to “Love” and “Cherish” each other.
