Feral Vinifera is our foray into a new and exciting adventure in the Santa Ynez Valley, that expresses our collaborative efforts with local grape growers and winemakers. Its journey begins with the sourcing and pressing of grapes from David Walker’s vineyard, co-fermenting the juice with a wheat-based wort, inoculating with proprietary wild yeast and bacteria, and allowing for a long fermentation and maturation in French Oak barrels. We have carefully fermented, matured and blended this beer with the collaboration of our friend, Andrew Murray, proprietor/winemaker at Andrew Murray Vineyards. The resulting cuvee; a partnership of Sauvignon Blanc, Chenin Blanc and Muscat grapes co-fermented with Soul Opal bends the mind and senses. Pineapple, mango, guava mingle with Meyer lemon and gooseberry. A funky savory yeast bouquet lays down a firm foundation, fruity esters and tart acidity lend body and structure. Finishing with a flinty minerality.

A: Lots of grapes, with light vanilla, and oak.
A: Golden color, clear, with a thin dense white head with adequate retention.
T: Slightly sweet white wine flavor upfront that's slightly mineral, gives way to lemon citrusy flavor, lightly tart with a bit of oak and a dry finish.
M: Medium bodied with moderate carbonation, light acidity and very smooth mouth-feel.
O: Delicious; the beer has great balance, with the grapes being lightly sweet, which contrasts well with the citrusy flavor and tartness.

c&c 375ml into a Barrelworks Teku at fridge temp, allowed to warm.
Look: light golden orange with little head but plenty of large bubbles.
Smell: grape must, white pepper, lemongrass, guava, fresh mint, wet stone/earth, mild funk as it warms.
Taste: sweet, with white wine dominating. Notes of the base beer peek through on the finish. As it warms, more metallic/wet stone notes evident at the fore. Definitely one to allow time to develop on the palate.
Feel: medium, slightly syrupy/sticky, juicy.
Overall: I guess my biggest ding would be that this is a really tasty wine. Personally, I'm fine with that, but if you're some sort of purist, you might be put off by the blurring of lines going on here.
