We humbly offer you Feral One on the occasion of our Fourth anniversary. Feral One is an annual blend of our best efforts, from hand-selected well-aged barrels, chosen by the Masterblender and Barrelmeister. An earthy funky nose gives way to complex ester notes of dried apricots, strawberry, guava and slight orange zest. Toasted mature oak, lavender, vanilla and cinnamon lurk in the background. A mouth-watering acidity and soft tannins are punctuated by a firm carbonation. Savor now, or age longer for a special occasion. Santé!

Batch 5 Bottled 01/05/18
Barrel Ratio: 84% French oak & 16% American oak
Maturation Time: 12-48 months / Titratable Acidity 9.7 g/L
Flora: B. lambicus, B. bruxellensis, L. brevis, L. delbrueckii

Bottle from the brewery in Paso Robles, CA.
Fours a clear light amber/tan/brown with a finger of creamy white head and good lacing, smell is spicy/bitter/sour prickly pear/ succulent vegetation flesh that finishes with apple brandy, taste is sour apple cider, splashes of guava and lime, finishes as musty white wine/grape juice, this beer is dry and well carbonated. A excellent fruity champagne-like beer. Quite refined for a feral one.
