Beer is typically fermented in a very calculated, controlled manner with pure strains of brewer’s yeast. Our pear lambic beer is instead fermented by exposing it to the untamed yeasts and bacteria that are native to our Brewery. We affectionately call this unrestrained, wild amalgamation our House Funk. This blend is unique to Rivertown and this unusual, spontaneous process, involving over a year of fermentation in oak wine barrels and addition of pear purée, is what gives this beer its distinctive flavor; sweet, acidic, funky and vinous with a crisp, lingering, semi-sweet, floral aftertaste.

Employing the unique funk and fauna that's indigenous to the Rivertown brewhouse, a strong lambic-like contender is built. Pulling copious amounts of pear from the orchards gives their fruit lambic a very specific American charm where its soul is that of Brussels.
Bright gold and laced with an even vail of haze, a creamy, short, white froth pulls from the ale and captures the nose with brisk orchard, citrus and vinous fruit and an overcast of cellar must and sea air. Bready sweet with sourdough, hard lemon candy and pastry, the malt influence is short, light and crisp.
And then the ale erupts on the middle palate, washing the tongue with a bold taste of branch ripened pears. Spicy, tangy and playfully acidic, the essence of the fruit remains remarkably identifiable as pear even as the ale shows impressive drying ability late on the palate. As its sweetness rapidly dissolves, the beer's undertow of lime, lemon, crabapple, dry french cider, sparkling white wine and kiwi. Peppery and sour, the taste of white pepper, vinous sourness and an earthen after palate of weathered woods and cured leather have the complex flavors rolling over the senses with endless waves of taste.
Medium light on the palate, the ale retains a firm wheaten body even in the beer's late dryness that gives the ale texture, tooth and creaminess. Piquant and acidic, the finish of spiced pears outlast any other flavor into a medium length aftertaste. Rivertown continues to impress with their sour ale program and Pear Lambic is a showcase of their talent and skill.

Appearance - The beer pours a coppery white color with a bubbly white head.
Smell - In every way, this smells like a sour.
Taste - The beer is sour with a pear influence. The sour clings to the sides of the tongue. As the sour fades, it brings green apples to mind. It is less sour in the aftertaste, but still quite sour.
Mouthfeel - The acidity is able to cling to the tongue. Even if this is not overly puckering, it stays around for a while.
Overall - Rivertown's sour program continues to impress me.
