A sour cherry lambic straight from a toasted barrel. The lambic that was used originates from 4 brews. We used 500 kg of sour cherries on 475 liters of lambic; fruit intensity of this Ruby Lambic is 715 grams of sour cherries per liter of lambic. Maceration is now about 6 months.
