Cellared 2.5 years. ruby red clear body, slightly pink tinted thick collar. Aromas of sour cherry with lacto, rhubarb, mild barnyard funk, bright oak. Taste is fantastic: the tart rhubarb matches the sour cherry, oak is clearly a back seat even to the funk, which is more cheesecloth funk now on the finish with lacto. Simpler but delicious. The surprise is how the acidity and tartness is so powerful, too much so, bright oak and some residual sugars are there but in the background, funk is almost completely lost. More aging needed I guess

For some people the rhubarb might be too tart but I love it tart, otherwise I wouldn't like rhubarb.
Look: purplish/red with a thin white head
Aroma: rhubarb some herbs
Flavor: The flavor is tart rhubarb and sweet cherry in a perfect balance, with a tad of grassy bitterness and funk that adds perfectly to the flavor profile.
Body/Overall: medium, I love the Swedish style rhubarb pie with significant tartness, and that's what this lambik reminds me of, delicious

A 750ml corked and caged bottle, blend°8, season 20/21, bottled on 5th January 2021. Bottle number 730 of 875. Poured into a 3 Fonteinen stemmed glass.
Appearance: A lightly hazy ruby red colour, with a half finger white head that dissipated fairly quickly, while leaving only sparse lacing.
Aroma: Cherry, berry yoghurt, whipped cream, oak, with notes of apple peel, and light earthy rhubarb.
Taste: Lightly sour, tart, cherry, cream, vanilla, oak, with a splash of rhubarb and citrusy lemon zest.
Mouthfeel: Medium bodied with soft to moderate carbonation.
Overall: Very nice aroma and flavours. While the rhubarb was there, cherry clearly dominated, and did no wrong as it was very enjoyable.
