A 750ml corked and caged bottle, blend°79, season 21/22, bottled on 3rd June 2022. Poured into a 3 Fonteinen stemmed glass.
Appearance: A hazy dark orange colour with a two finger white head that had great retention and left lots of nice lacing.
Aroma: Elderflower, earthy, grass, oak, damp wood, funk, with light notes of grapefruit zest.
Taste: Sour, tart, floral, elderflower, grass, hay, oak, light funk, lemon zest, grapefruit.
Mouthfeel: Medium to light bodied with moderate carbonation.
Overall: Enjoyable with good balance between the floral, citrus and funky elements. The key for me is that it’s not overly floral.

The foggy dark amber body skirts just shy of light brown under a tall khaki foam head that retains well.
This is so supremely floral beyond anything else I've had thus far it's absurd. Yet at the same time, it's somehow not painfully bitter. It's kind of beautiful, actually. Apparently it's only macerated for a day, as opposed to other fruit.
After this botanical punch right up front, it then exhibits plenty of oak, a green tea-like presence, and touches of plum. It's exceedingly delicate and flavorful at the same time, while softly frothy and semi-dry, with a unique touch of limestone or other minerality that I can't quite pinpoint on the nose as it warms.
This was the last bottle we ordered while visiting their Lot brewery, but unexpectedly, not the last beer we'd have while here. Not by a longshot...
