A- pours a bright clear golden color with. Small foamy white head that reduces to a film skimming the top
S- classic horse blanket Brett aroma with notes of dried hay, musty yeast, lemon grass, pear & earthy notes
T- light and fruity up front with notes of ripe pear, Apple and lemon grass. Spicy Belgian yeast mid-palate, the finish gives light Brett tartness with a liger of dried hay and must
M- medium-light body with low carbonation leads to a slightly foamy mouthfeel and a crisp finish

Quite possibly one of the worst beers I've tried. I love me some barnyard funk, but daaaaaaaaamn. Tasted/smelled like manure perfume.
I am really shocked this was not very tasty, as I'm usually a complete fan boy of all things Noble.

Fun, hopped up, Bretted out Belgian pale collab here. Mosaic+Amarillo hops come out in the nose, floral, some damp/musty citrus maybe too, with a hint of phenolic snap or Bretty compost as you go. Palate is a hoppy Belgian pale as advertised, with those spicy/prickly phenols combining with those hops to give this thing some punch. More of a beer for savoring than quaffing. Nice stuff.

WOW! Fantastic Mosaic aroma up front followed by that funky Bret smell. Taste is much the same with the Mosaic really adding another dimension of flavor. Tart funky acidity with a great citrus presence. Can't wait to see what this beer turns into down the road. One of the best dry hop farmhouse ales I have had.

500mL bottle from j47paco (thanks buddy!). No identifiable bottle date. Served in a Wicked Weed snifter.
Pours a pale, hazy, straw yellow with a finger and a half quickly dissolving head. A tight halo and a few thin islands of bubbles remain but leave almost no lace.
Nose is earthy, floral, fruity and funky with mild spice and some wet hay.
The taste picks up on those aromatics. Floral, earth, hay, funk, apricots, grapefruit rind, oranges and a little vague spice. There is no alcohol detectable and this goes down quite easily.
Medium light body with fairly strong carbonation. Aftertaste continues the blend of earthy funk and mild citrus.
Noble and Monkish have teamed up to produce a pleasant blend of earthy, floral, citrus and funk in We Saved Latin. This is an easy drinking style mash-up that seems well on its wat to Brettland as the hops are already sinking into the background. Drink now to savor what is left of those floral and citrusy hops or wait and let the Brettanomyces bring the funk.

had my doubts but this is an incredible beer.
Monkish and Noble fucking nailed it.
This is coming from someone that is extremely picky and finicky with belgian / belgian inspired brews.

Bottle pour at the LA Beer Week Kickoff Festival held at Exposition Park in Los Angeles, CA.
Pours a murky honey yellow with a foamy bone head that settles to a film on top of the beer. Small dots of lace form around the glass on the drink down. Smell is slightly sour with grain, fruit, funk, and Brett aromas. Taste is much the same with slightly sour grain, fruit, earth, funk, and Brett flavors on the finish. There is a mild amount of acidity and Brett bitterness on the palate with each sip. This beer has a good level of carbonation with a crisp mouthfeel. Overall, this is a very good beer with a nice mix of sour, funk, and Brett qualities all around.
