Clover (2005-2014) was a grey cat. Simple. Yet, a few moments with her quickly revealed an independent, playful, occasionally subdued and reflective personality, one that held sway where she might roam. Clover was our compatriot, our guardian of grain, our huntress and our muse. We did not own Clover; she graced our presence.

Batch 2 - 2019 is a blend of Ann and Art (batch 1 also had Flora in it) that had been aged for 12 to 22 months—guided by her lingering spirit towards a beer of elegance, grace and patience. As often our Clover would, this beer took its own path and its own time to become what it is now; an effervescent, refined reflection of both our melancholy for her departure, but most importantly, our joy in traveling with her for a while.

Purchased a bottle at HF @ Spring 2019. Bottle dated October 19, 2016. Considering the earliest reviews of Clover were in mid October 2016…I’m assuming this was from Batch 1. Regardless…I further cellared it and finally had it around Christmas 2024 and it was amazing. Extraordinary! Probably best saison if not best beer I’ve ever had.
Gorgeous soft yellow with slight darkening to gold as it reflected to light. Huge plump white head that lingered and laced. Nose was full and expressive with lemon and field flowers, taste mirrored but brought out oak and a perfect gentle funkiness and just hints of barn loft in summer. These notes just added a sophisticated complexity to fruits and flowers. Stellar. Well rounded soft body with just right natural carbonation like a very high end champagne.
I’ve been fortunate to enjoy wonderful saisons on site at Side Project; Russian River; DeGarde, Sante Adarius, and in Europe freshly poured from bottles, kegs and casks… let alone dozens of bottles of deservedly well regarded Belgians like Cantillion. Nothing prepared me for this. So delicate So good. Definitely best Saison I’ve ever had; probably best beer.

Blend 3. Hill review number 100 for me! Definitely leans towards the Flora side of things with a noticeably higher level of lactic and wheat-driven tartness than many of the Hill wine barrel aged offerings. Has that wonderfully complex English muffin-like sweetness from the malts and a decent amount of oaky astringency as well. Really great, but maybe not better than the sum of its component beers
