We chose two barrels of our wheat imperial stout, Genealogy of Morals, as the base for a series of single origin coffee experiments. After aging 20 months in select bourbon barrels, we conditioned the beer atop Finca Vista Hermosa's Guatemalan coffee beans sourced and roasted by The Coffee Collective in Copenhagen. These friends long ago changed our world-view as to what coffee could be. After months of bottle conditioning, the beer is now ready for release.

375 mL bottle. Black body with a small khaki head. Smells of earthy and meaty coffee. Some alcohol and chocolate. Tastes very chocolatey. Coffee lends to it. As the chocolate dies down, the meaty and earthy coffee kicks in. Back end is boozy and oaky. Medium heavy. Slow drinker, but very tasty.

This one pours a fairly dark black color, with a very small head, and not much lacing.
This smells like dusty oak spice, caramel, vanilla, dried dark fruit, and some oxidation.
Luckily this doesn't taste as oxidized as it smells, which is still honestly not that much. There's wonderful caramel, bitter espresso, dark fruit, oak, leathery bourbon, and brown sugar.
This is pretty lightly carbonated, with a silky smooth body, and not much booziness.
This is maybe slightly past its prime, but it's still pretty tasty.

Delicious barrel aged stout, I wish I'd been able to try this a bit fresher as I imagine the coffee component would have been more front and center. As is everything is really well integrated and deep, coffee blending with chocolate and a significant bourbon contribution. Not hot and boozy though, very mellow all around despite the whiskey notes, well rounded, sweet but not sugary, medium full bodied. Not the hugest body but moderately sticky nonetheless. Just tremendously tasty stuff.

375ml bottle, dated May 2, 2018, poured into a black Hill Farmstead oversized wine glass. Enjoyed on March 10, 2019, reviewed from Tasting Journal.
The beer pours a jet black color, thick, viscous and rich with a khaki head that has good retention and yields some spotted lacing. The aroma is very nice, rich coffee, robust, chocolate forward with a nice roast, softly charred wood, warm bourbon, light vanilla with brown sugar, coconut and a light fruitiness. The flavors are good, lots of coffee, rich and roasty with a lightly acidic dark fruit flavor, big chocolate character and and lots of warm bourbon, hot barrel, charred wood with a toasted coconut forward finish. The mouthfeel is good, coating, creamy heavy body that is thick and finishes warmly.
Verdict: An excellent GoM variant from Hill Farmstead. The coffee is dynamic and offers a nice richness yet also a nice acidity that brings out some underlying fruit characteristics of the base beer. The barrel is fairly warm, perhaps a bit too hot that takes away from the overall balance of the beer, but this is an excellent beer.
