As part of our single origin coffee experiments, we aged the beer for more than 16 months in Privateer Rum barrels then further conditioned the beer atop Akmel Nuri's organic Ethiopian coffee beans sourced and roasted by The Coffee Collective in Copenhagen. These friends long ago changed our world-view as to what coffee could be and continue to deeply influence us here at Hill Farmstead.

An angry and syrupy black pour builds a short and uneven bubbly tan head that dies to a fine collar.
Very mocha forward of dark chocolate and a nice expression of barrel char, the malt is still able to contribute ashy tobacco. The barrel at times becomes very woody, as is typical with Hill, yet without becoming acrid or unpleasant. As it warms I also detect some Spanish peanut qualities.
A little lighter than it looks, it's more medium of body, but smooth, though finishing lightly sticky but still semi-dry.
Not only is this one of the better rum barrel aged beers I've had, it's also one of the better barrel aged stouts Hill has done.

Black oily appearance with a fast fleeting tan head that recedes quickly to a collar, very minor lacing. Beautiful earthy soothing rum barrel notes, coffee, molasses, and vanilla. Thick body, smooth coating mouthfeel.

This one pours a very dark black color, with a small head, and not much lacing.
This smells like spiced coffee, oak, coconut husk, vanilla, chocolate fudge, espresso, caramel, and roast.
This is really exceptional stuff. The coffee and rum swirl together very well - with some spice and coconut notes, but not much straight up rum notes. There's lots of caramel, and chocolate fudge, and an elegant roasty/vanilla type coffee character, and a touch of spicy oak. There's no booziness to be found here. This is just exceedingly well done, and carefully brewed and constructed.
This is velvety and silky, with a medium body, and a very high level of drinkability. I don't know what the ABV is, but it clearly hides it.
This is a top level stout no matter which way you look at it.

rum, chocolate, coconut to an almost tropical extent, vanilla, oak, roasty, hinting at dark fruit, deep roasty coffee, mellow acidic fruity character. immensely smooth and creamy, a definite rum flavor but its nowhere near overpowering. mouthfeel is on point, flavor is so bold and complex but also just wicked integration of flavors. wow!

Similar flavors follow on the palate, with sweet caramel/toffee/chocolate notes on the front and a smooth coffee punch on the back end, finishing a modest barrel touch.
This variant is slightly better than older vintages of "regular" Genealogy of Morals.
