Edith (1897-1992) was our grandfather’s sister, and Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this dark Farmstead® ale is crafted from American malted barley, German roasted malts, European hops, our farmhouse yeast, and water from our well.

For this special selection of Edith, we conditioned the beer atop Alaka coffee from the Guji region of Ethiopia, sourced and roasted by The Coffee Collective in Copenhagen, Denmark.

Mostly opaque mahogany with a tan head of moderate height settling to a persistent blanket leaving fluid, spotty lace.

The contrast between the tart, almost crabapple-esque dark saison and the chocolatey mocha of the added coffee is really unique, softening the acidity of Edith incredibly well. It also helps to develop a little toasty, toffee characteristic in the background as it warms.

The medium body has a soft froth and finishes semi-dry.

375 mL bottle. Deep brown. Medium khaki head. Smells of lots of coffee, nutty malts, light acidity. Tastes of coffee, nutty malts, light creaminess, and then a swift kick of vinous tang. Medium body. It's weird. Not necessarily a bad weird, but I don't know if it works wonderfully well.

375ml bottle, poured into an etched Hill Farmstead Rona wine glass.

The beer pours a dark cola brown color, almost black with a nice opacity and a taut khaki head that rises about two fingers with great retention and excellent lacing. The aroma is very unique, light funk, berry esters with chocolate and a light coffee roast that brings out some more of the fruit and some acidity, a touch of roast with stone fruits, dark grains and mineral water. The flavors are great, dark grains, chocolate, an interesting coffee profile that does offer some roast and bitterness and even a richness that amplifies the chocolate and dark grains, and brings forward stone fruits while the funkiness comes out towards the back end and showcases a more tart fruit character. The mouthfeel is great, coating, lively medium body that is super smooth and finishes with a lightly tart bite.

Verdict: A very good and very unique beer from Hill Farmstead. The dark saison on its own is already interesting and the addition of coffee increases the subtleties and takes this beer to new heights.

This one pours a black/dark brown color, with a small head, and lots of lacing.

This smells like roasted malt, cherry, red wine, a touch of citrus, smoke, chocolate, and a little bit of coffee.

There’s not a ton of coffee here - it’s a light accompaniment to a great base beer. It adds a bit more rich chocolate and roast to the malt backbone. There’s still that nice fruity and cherry-ish funk, and a light pleasant smoke.

This is light bodied, and very creamy, with a great drinkability.

This isn’t necessarily better than regular old Edith, but it was still a cool beer to try.
