Notes: Our wheat imperial stout aged in bourbon barrels for me than two-and-a-half years. This offering was then conditioned with Finca Vista Hermosa Sarchimor, grown by Edwin Martinez in Huehuetenango, Guatemala, and sourced and roasted by our age-old friends at the Coffee Collective in Copenhagen.

500ml bottle served in a Spiegelau tulip. Pours one shade shy of black with a dense, quarter inch, mocha colored head embedded with ringlets and pinpricks. Nose reveals a huge hit of dark roast coffee, followed by a peppery quality, hints of cocoa and vanilla and finish with a slight vegetal note. Flavors are less intense than suggested by the nose. Barrel notes are come off as a being somewhat mellow and the cocoa shines through. There’s also a kiss of artificial sweetener. Mouthfeel is light-medium in body (closer to light) with an easy, even carbonation. Overall, interesting by not my favorite IS from Hill.

Now in bottles! This was an interesting one, and my first in the GoM series. Aromas are decidedly 'old school' -- lots of roast, bakers chocolate, semi-stale coffee, white peppercorn, and oak. Flavors are sweeter than expected, with notes of fig, chocolate ice cream, and espresso. Bourbon barrel character is fairly subdued given the length of time spent aging. Mouthfeel felt a bit thin, but that might be because I've become so accustomed to high gravity BBA stouts. Overall this was good, but not quite worth the cost of entry, $25/16.9oz

Growler. Dark tan head that settles quick. Black color.

This is a complex, decadent stout. I used to think HF stouts were overrated and just underwhelming in general, but either they have gotten better or my tastebuds have changed.

Rich fudge and cocoa, the coffee is beyond amazing. Not burnt, not bitter, lightly roasted. The coffee blends so well with the bourbon barrels. So much barrel flavor. An excellent char to go with the amazing whiskey notes. Vanilla, figs, molasses. Wet oak.

Full bodied. Smooth, warming. Great feel all around. Very impressed with this one.
