This tryptic assembly—our fourth of the sequence— is composed of Genealogy of Morals that enjoyed 18 months in Bourbon barrels and was then divided into a Saxon’s River Distillery Sapling Honey Bourbon barrel and a Saxon’s River Distillery Sapling Maple Liqueur barrel for nine months each, and a single barrel of Damon rested first in Bourbon barrels for 34 months then secondarily in an Elijah Craig 18-Year barrel for an additional six months. The curated blend was then conditioned atop a blend of vanilla beans from Ecuador, Madagascar, Tahiti, and Papua New Guinea.

Got in a trade as an extra! Stored at 55°F. Poured into a Spiegelau stout glass. Bottled on 03/29/23, consumed on 4/25/25. I think the 500 mL bottle was around $40.

A&S: Pour a half finger of chocolate head that disappears pretty quickly. Dark brown beer. The aroma contains bourbon, figs, and 50% dark chocolate.

T&M: Chocolate-dipped cherries, dark cocoa, figs, and a little caramel. Vanilla is in there, but it's not as strong as I expected from the description. Hazelnuts and chewing tobacco in the finish. Very consistent through the tasting. Medium bodied with low carbonation (not matching the head) that initially forms.

Overall: This series has not blown me away all that much. From the other beers I have had from Hill Farmstead, this is just not their strong suit.

S -- Vanilla bean, maple, black licorice, spearmint, roast, herbal hop, incense. Interesting combination of "old school" RIS and "new school" pastry aromas
T -- A little bit of everything here: roastiness and bitterness from the Damon, a hint of dark roast coffee from the Genealogy of Morals, some maple sweetness from the Saxton's River distillery barrels, and a rich and very authentic vanilla character hovering over it all.
F -- Typical Hill Farmstead lower gravity mouthfeel that helps keep things from getting too syrupy
O -- Really interesting and layered offering. Almost too much going on, but it's cool how you can really pick apart the contribution of each component individually

This one pours very black and oily looking, with no head or lacing.

This smells somewhat like maple bourbon chocolate truffles, with some honey and oakiness as well.

This is really delicious, and maybe the best entry in this series yet. The honey and maple barrel here works really well, adding a softly sweet truffle vibe, like a high quality little chocolate with maple and bourbon flavor in there. There’s unrefined maple sugar, lots of roastiness, some caramel, and some dried plum vibes. The barrel adds some oakiness and spice that works well with the sweeter up front elements.

This is a really wonderful blend that works well to me, with a nice sweet and creamy finish. It doesn’t get cloying at all though, with some nice balancing characteristics. It’s more than drinkable for the style and the ABV, with very little booziness. It’s just so creamy and velvety.

This was decadent and just a really delightful little treat.
