Damon is the name for our most cherished stout and was Shaun and Darren’s furry companion—devout and patient in an age of busyness and distraction. In his honor, we brew a rich, complex imperial stout and then rest it in Bourbon barrels.
This particular instance was conditioned for two years in Buffalo Trace Bourbon barrels, then an additional two years in 18-year Elijah Craig Bourbon barrels, followed by time on whole vanilla beans. The resultant expression carries forth the original beer's spirit while accentuating and heightening the experience of time and intention.
