I always take it as a good sign when the first beer I drink from a new brewery strikes me as favorably as this one did. Pilot / Co-Pilot may suffer from a somewhat cumbersome and irreverent name, but it is nothing less than a smooth-drinking ale. It begins with an aroma of dry roasted grains that touches upon chocolate, and a bitter chocolate taste with a sweet undercurrent. The beer is impenetrably black with a sensuous, creamy body topped by a beige head.
Elegant and repeatable. Above all, smooth.
