I sampled this dry and luscious stout at the brewery where I was informed of its unique pedigree. It is brewed with about 5% wheat and gets a primary fermentation with an English ale yeast, then a secondary with champagne yeast. The result is an impenetrably black ale with a high-rolling head of lumpy tan loam yielding thick, breakaway lace.
Black Water delivers a charismatic abundance of coffee flavor, chocolate aroma, and deliciously smooth contours. An excellent stout; unexpectedly potent and distinctive. Looks for its uber-imperial cousin, an 11% imperial called Night Witch 588.
