Blending two of the best of brewing worlds, 8 Wired brewers take the hops of America's pacific northwest and apply them to the rustic and refined saison style. Something of a pale ale and a farmhouse ale, the action of wild yeast quickly controls the session regardless.
Farmhouse Pale Ale pours a hazy pale gold color and crowns with a creamy eggshell froth. A funk filled perfume reveals the scent of wood decay, horse hair, hay and weathered citrus. Flavors of sourdough, baked bread and a light pastry sweetness graces the tongue just as the musty scent releases.
And then the middle palate pulls through with citrus and spice, leading with the tanginess of under ripened orange, lemon, pear and papaya. White pepper, dried parsley, fennel and dandelion counter the fruit and lead into a dry and spicy finish. Sparkling with the lightness of dry white wine, a bitter hoppiness closes the session with a bouquet of herbs, grasses and dried hay.
Medium light in body, the beer retains a slim creaminess but with a crisp and refreshing finish. A return of earth, must and attic worn woods bring a strong sense of burlap and balsa to the after palate, both in taste and in a retro olfactory sense.
