22 oz bottle poured into a short stemmed glass. L: Gold color, great clarity, and good white-head lacing. S: Subtle spiciness, low fruity esters and alcohol aromas. T: Subtle spicy, fruit and alcohol flavors, well blended profile. F: Medium body. O: Solid Belgian Tripel style from a local brewery, and smooth at 9%.

Pours a reddish-orange body with good carbonation that led to frothy head but no lace. Aroma is slightly tart and yeasty with this apple cider type aroma for some reason (apple/fruit sweetness with an acidic sharpness and vinegar like spiciness). Light and crisp body with smoothness thanks to yeast, but mostly a fruit sweetness and crisp (more apple and pear than tropical) and while enjoyable it reminds me of a simplistic/generic sweet white wine.

The bottle says "Fond de la Mer" but the website auto-capitalizes everything. I don't see a bottle date but it says 9% ABV and 37 IBUs.

Appearance: The head is a fantastic huge lofty white cloud. It has decent retention but not much lacing. Eventually it fades out to a thin layer of bubbles. The body is an opaque golden orange color.

Aroma: I am getting this big zesty and herbal, slightly mossy aroma, that shortly becomes overpowered by this sweet grain aroma. I should mention that there is no coriander aroma in this Tripel. It smells very fresh.

Taste: It has more of that mossy character in the flavor which is a bit reminiscent of springtime. This is followed by a very sweet honey flavor and followed by a bit of clove flavor at the end.

Mouthfeel: It is a thicker Tripel than the drier traditional beer. it is even a bit slick at times. The carbonation is good.

Overall: If you like dry crisp Tripels and dislike the sweeter variants then pass on this. If you can stomach a sweeter beer then you will be welcomed with a wonderful earthy character that intermingles with the sweetness instead of cutting at it. While this beer is good enough that I am glad I tried it once I doubt I would buy it again. The layers of sweetness just pile on top of the palate to the point where it becomes a bit overwhelming.
