A few weeks ago on a beautiful west coast day we welcomed Alder, one of the best IPA brewers in Europe, to our brewery.
Marco has built a highly respected and award-winning brewery just north of Milan, and in recent years has produced some of the best IPAs we've tasted. This beer is heavily influenced by Marco’s playbook, but features some of our favorite dank hops: Strata and Simcoe for tropical fruit, rounded out by the distinctive old-school pine resin aromas of Simcoe. Meanwhile, CTX Strata is a concentrated cryogenic hop that amplifies some of Strata’s core flavors.

Copenhagen 5/4 2026. 44 cl can from Den Gamle Købmand, Skt. Annæl Plas, Kbh. K. A black swan on top of a white swan on the dark blue can.
Pours unclean, almost opaque, golden yellow with a mid-sized white head. Settles as a 0,5 cm thick layer of uneven foam covering the surfacer of the beer. Clinging to the sides of the glass. Substantial lacing.
Aroma is medium intense with a sweet odor o tropical fruits mingling with a sharp, zesty scent of citrus fruit. Sweet pineapple and peach. Citrus and grapefruit. A whiff of pine tree.
Light carbonation. Slightly thick, oily, soft, lightly tingling texture.
Flavor is fairly intense with a medium strong sweetness followed by a stronger bitterness. Aftertaste is bitter with a sour tang. Lingers for a while. Finish is dry.
Fine Irish-Italian specimen.
