Cellared 8 years. The wife says, "it’s like a (traditional) lambic met a scotch barrel”. While it doesn’t have funk is does have a hint of lemon sourness but I wouldn't call it fully a sour. Belgian yeast is the best part by far, bready, lush and full. Has hint of white grape, flowers, grains, deep earth, and pungent must around the yeast base. Feel doesn’t stand up to the barrel except the yeast, thinner and warm. Smell is straight earthy barrel the whole way, almost a burning smell, and this is with 8 years of age! The carbonation is still very high despite the yeast, sustained large white head forming is a result. Truly a unique beer, but not one I need to have again
