Golden wheat (SRM 3-4) with a chill haze. A fine white head flashes over the top before becoming a ring and light fog. A viscous film weighs down the thin veil lace with each sip.
Sour funky Brettanomicies curdles the nose retreating momentarily to reveal a burst of lemon. Oak comes and goes as it lingers in the background.
A sweet entry immediately yields to sour dryness. Acidity is high, yet seemingly controlled. Over-ripe apples and lemon zest fill the middle while tropical flavors come and go. Oak is revealed late and builds to a strong presence in the lingering, bitter finish.
The body is medium to full with a soft smooth, oily texture. Alcohol is as expected, as is the fine carbonation and exceptional dryness.
Paw Paw is unknown to me, and I had hoped to try one before this beer. Unfortunately, I am unable to clearly identify the fruit in the aroma or the flavor of this beer. Regardless, this beer is tasty and satisfying. Nothing particularly special or unique.
Based on written descriptions, Paw Paw should have a mango, banana. and citrus flavor. Knowing this, the citrus was present. The bananas, though perhaps faint, may have been only a subliminal suggestion.
