another fascinating beer from these guys, whose really only limiting factor for me is price point. they are definitely making some of the more interesting and exotic wild beers out there, and while on paper this one seems to be one of the more simple ones they make, the flavor is anything but. not overly bubbly, but shiny golden in color with a short lazy white head that dissipates quickly. it smells like white wine rather aggressively, but alas, i think this is one of the ones they do without any fruit in it at all. it sure has that white wine grape quality about it, maybe something picked up from the oak barrels. this has a mature woody nose but a newer woody taste, some must, a little vanilla, straw. some interesting bacterial element here too, especially in the taste, a little medicinal, quite acidic, tangy but not drying, a little floral, sharp, white wine again, iodine for a second, very strange, but thats what we buy these crazy italian wild beers for right? the curious fermenting agents? i know i do. it could stand a little more carbonation, it almost needs that to make it delicate in feel as it is in flavor, but still a very high end and very nuanced beer. not quite as compelling as some of the more common ones you see around a little bit, but well worth a try if you are as fascinated by what these guys are doing as i am!
