a ridiculously fragrant flower based sour beer, aged in wine barrels. they use rose and hibiscus and lavender and chamomile and maybe even some others, its perfume forward, but in an appealing, springy, blooming, full of life sort of way, natural despite being intense, very attractive, almost makes me allergic sniffing it hard, polleny and herbal and seasonal and complex. the flowers overcome a lot of the sourness in the aroma, so when i take my first sip, its sort of shocking in that the sourness is quite sharp and it really does come out of nowhere a little bit here. i get the hibiscus and the lavender most, but there is a bitterness too, maybe the chamomile or an elderflower or something, delicate vegetal bitterness, but bitter just the same, almost a green tea finish to this. the acidity is high, but there is nice fruity and semisweet notes from the wine, and the wood softens some of the pucker. this is really over the top flavorful, but it seems naturally derived, which i really like. all the sour and wild beer in here was insanely interesting and really well done. this is one of the more memorable beers with flowers i have had in a long time. these guys are way underrated in my opinion!
