absolutely astoundingly amazing, this was our favorite beer we had here at this incredible brewery, never seen these white labels with the cursive writing on them from these guys, must be newish, this one is wild beer done in oak with strawberries, and it is wonderful. the color is real pale orange, fizzy like soda but not collecting a ton of head, nice shine in the afternoon sun, gorgeous packaging on these too. the nose is super funky, even more bretty wildness than their terrer spontaneous ale we had before this, maybe a little less of the obvious acidity, but a similar, albeit younger profile on this, perhaps unblended, a single vintage, my spanish is too weak to get real details on it and the labels are minimal. the fruit is pretty subtle, they even told me they dont overload it with fruit, just let a little bit of the strawberry sweeten up and accentuate the base beer, cool to have it be this reserved but also this apparent, natural and summery but also jammy and sweet in the nose, amazing against the funky tang of the base beer, and it pairs well with the richer malt base this has too, a bit of light crystal in here along with plenty of wheat it seems. the flavor is downright epic, layers of berries on toast, homemade strawberry jam, and rustic fermentation character. some tannic oak to this, a hint of honey and vanilla, some greenery like the tops were left on the berries almost, and a freshness amongst the maturity thanks to the fruit. as it warms i get good champagne, sweet orange, and more of a mixed fermentation thing. not sure this is exactly lambic, but it seems closer to that than wild saison, rules and origin aside. the complexity here is amazing, and its so organic and original, nothing like it in the world, and not just in the ferment, across the whole beer this is unique, i love the strawberries in it, and to be able to drink it on site here at this incredible brewery was an almost out of body experience. unforgettable. thankful to have been able to bring a bottle home, this is going to age super well! positively world class!
edit: i broke down and opened the bottle we brought back this weekend, only about a year since we were there, a little less, but this has already evolved a bit, faintly tarter now but a ton of funk too, really wild and unique on the fermentation side, and the berries pop in such a cool way, the little bit of extra acidity is like an exclamation mark on the fruit, mouthwatering and bright as can be. really woody, effervescent, and mature. nothing like this in the world, i need to find more! all who shared in this bottle found it equally special!
