wild ale with cherries, like the strawberry edition, quite subtle on the fruit, an accent, totally fermentation driven, and just slightly maltier than what is common in these, lots of depth to the grain side, and really interesting, tons of terroir, this is something that really could only come from this special place, and its wonderful beer. lightly pink from the cherries, pops from the understated green bottle, but really doesnt have much head or carbonation, shiny in the glass, leggy like cognac, high radiance and clarity. the nose is tart and bacterial, also some tanginess in the fruit, its bretty too though farmy and rustic, a mixed fermentation vibe all the way, with some honey character and even a little baked richness to the malt, nice layers and balance, weird in a good way, and only moderately fruity. the flavor is similar with all the fruit at the end, sort of wrapped up in the acidity of this, they never get jammy like the strawberries do in that one, stay wild and tart, i like the subtle dosing, lets the ferment shine, and its killer here, unique to this brewery but similar to a few of the other bottles we had while we were there. decent pucker to it but a ton of funk and even some spicy saison esters. a touch of sweetness through the end for balance, a little low on carbonation but i like the slower pace of this, lots to taste here, and it warms up nicely. a ton of fun to sit here in the sun and sip on this with my wife, what a gem this place is!
