another heady bottle we were blessed to be able to drink on site here at the brewery. this one with the same modest packaging and green glass, totally spontaneous fermentation, a lot like the terrer we had on tap, but maltier, a much richer complexion to it, almost english in grain built, light amber in color, not overly carbonated or heady although this one has a bit more froth and retention than the others, and radically interesting on the ferment and quite long aged it seems, some neat vinous oak character to it, hints of chestnut, raisin, honey, and baked bread, hearty and autumnal to me, somewhat acidic, mouthwatering in the nose, good balance in the flavor, a lot of old bretty funk to this too, really a house wild character happening that i have not found anywhere else, so unique! lots of layers to this as we let it sit, dates and some attendant sweetness, nuttiness too, cardboard and paper, rotting wood, light vinegar sourness, birch syrup, toffee, hazelnut, dried flowers, and straw. insane complexity, very fermentation driven but the richer malt does a lot for this. a little better carbonation than the others have, and lots of body too, but not heavy beer to drink. really unique in this space, of fabulous quality, i just kept shaking my head how its crazy nobody has ever heard about these guys, seriously one of my favorite breweries in the world after having visited. next level, no comparison!
