Vienna 13° - our senior Martin Matuška returned to the drawing board and compiled his old new recipe for bottom-fermented, semi-dark beer for November.
We have brewed this Viennese lager for you as a small reminder that at a certain period the city of Vienna was also our capital. Also, that during the Habsburg Monarchy there was a significant development of the brewing industry in our territory. I got to know the Viennese lager recipe in Tunisia, where I started a microbrewery in the city of Sousse with Viennese brewer Ivan Farkaš. Ivan then showed me how such Vienna is brewed.
We brewed our Vienna for you from Pilsen malt, Munich malt, caramel malt and Karapils malt. We also added some unmalted barley to improve the foaminess. We cooked Wien using a decoction and two-mash method. During the hop fermentation, we added Žateck semi-early red wine in three batches. Bottom fermentation yeast took care of the main fermentation.
